Preparing the Beef Patty

    Form the Patties

    In a mixing bowl, combine the ground Colorado beef, salt, and black pepper. Mix gently until combined, being careful not to overwork the meat. Divide the mixture into two equal portions and shape each portion into a patty, about ¾ inch thick.

    Chill the Patties

    Place the formed patties on a plate and refrigerate for at least 30 minutes. This helps the patties hold their shape during cooking.

Cooking the Patties

    Preheat the Grill or Skillet

    Preheat your grill or skillet over medium-high heat for about 5 minutes until hot.

    Cook the Patties

    Place the chilled patties on the grill or skillet. Cook for about 4-5 minutes on one side until a nice crust forms. Flip the patties and cook for an additional 3-4 minutes for medium-rare, or longer if you prefer well-done.

Assembling the Burger

    Prepare the Toppings

    While the patties are cooking, slice the tomato and onion into thin rings. Rinse and dry the lettuce leaves.

    Toast the Buns (Optional)

    If desired, toast the brioche buns on the grill or in a toaster until golden brown.

    Build Your Burger

    Once the patties are cooked to your liking, place each patty on the bottom half of a brioche bun. Top with lettuce, tomato, onion, and pickles. Finish with the top half of the bun.
