Crust Preparation

    Make the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until all crumbs are evenly coated.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove from oven and let cool.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and continue to beat until well combined.

    Add Remaining Ingredients

    Add sour cream, vanilla extract, and flour to the cream cheese mixture, mixing until smooth. Add eggs one at a time, mixing on low speed just until incorporated.

    Pour Filling

    Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

    Bake the Cheesecake

    Bake in the oven at 325°F (160°C) for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool slowly in the oven for about 1 hour.

    Cool and Chill

    Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight for best results.

Topping Preparation

    Prepare Berries

    Wash and prepare fresh berries. If using strawberries, hull and slice them.

    Before serving, sprinkle fresh berries on top of the cheesecake and dust with powdered sugar to taste.
