Bison Patty Preparation

    Mix Ingredients

    In a large bowl, combine the ground Colorado bison, salt, black pepper, garlic powder, and onion powder. Mix gently with your hands until just combined, being careful not to overwork the meat.

    Form Patties

    Divide the mixture into two equal portions and shape each portion into a patty about ¾ inch thick. Make a small indentation in the center of each patty with your thumb to prevent puffing during cooking.

Cooking the Patties

    Preheat Grill or Skillet

    Preheat your grill to medium-high heat or a skillet over medium heat. If using a skillet, add a little oil to prevent sticking.

    Cook Patties

    Place the bison patties on the grill or skillet. Cook for about 4-5 minutes on one side until browned, then flip and cook for another 3-4 minutes, or until the internal temperature reaches 160°F (71°C).

Assembling the Burger

    Prepare the Bun

    While the patties are cooking, slice the brioche buns in half and toast them lightly on the grill or in a toaster until golden brown.

    Add Toppings

    Once the patties are cooked, place each patty on the bottom half of the toasted brioche bun. Layer with lettuce, tomato slices, onion slices, and pickle slices. Top with the other half of the bun.
