Prepare Pasta

    Cook the Pasta

    In a large pot, bring water to a boil. Add 1 tsp of salt, then add the penne pasta. Cook according to package instructions until al dente, typically about 8-10 minutes. Reserve 1 cup of pasta water, then drain the rest and set aside.

Cook Shrimp

    Sauté Shrimp

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

Make Sauce

    Prepare the Creamy Sauce

    In the same skillet, lower the heat and add 1 cup of heavy cream. Stir in the grated parmesan cheese, halved cherry tomatoes, lemon juice, 1 tsp of salt, and 1 tsp of black pepper. Cook on low heat until the cheese melts and the sauce thickens slightly, about 3-5 minutes.

Combine

    Mix Everything Together

    Add the cooked penne pasta and shrimp back into the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency. Cook together for an additional 2 minutes to heat through.

Serve

    Garnish and Serve

    Serve the shrimp scampi immediately, garnished with chopped fresh parsley. Enjoy your creamy garlic penne pasta with shrimp!
