Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let cool.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy, about 2-3 minutes.

Incorporate sugar and sour cream
Add the granulated sugar and sour cream to the cream cheese and beat until well combined.

Add key lime juice and zest
Mix in the key lime juice and key lime zest until fully incorporated.

Add eggs and vanilla
Add the eggs one at a time, mixing on low speed after each addition just until blended. Finally, add the vanilla extract and mix until smooth.

Pour and bake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool the cheesecake
Once baked, turn off the oven and crack the door open to let the cheesecake cool gradually for about 1 hour. Then refrigerate for at least 4 hours or overnight.

Make the whipped cream
In a medium mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer, beat on medium-high speed until soft peaks form, about 3-5 minutes.

Once the cheesecake is fully chilled, slice and serve with a dollop of whipped cream on top.
