Ice Cream Base Preparation

    Prepare the Vanilla

    Split the vanilla bean lengthwise and scrape out the seeds. Set both seeds and pod aside.

    Heat Cream and Milk

    In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, salt, and the vanilla bean pod. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Once the cream mixture is hot, slowly pour about a cup of it into the bowl with the egg yolks to temper them. Whisk continuously to prevent the yolks from scrambling.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Stir well and cook on low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 6-8 minutes).

    Cool and Refrigerate

    Remove from heat, stir in the vanilla seeds, and strain through a fine-mesh sieve into a bowl. Cover and refrigerate until completely chilled, preferably overnight.

Churning and Freezing

    Churn the Ice Cream

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Ice Cream

    Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

Sundae Assembly

    Prepare Sundae

    Scoop the ice cream into bowls or cones, then drizzle with chocolate sauce, sprinkle with chopped nuts, add a dollop of whipped cream, and top with a cherry.
