Method

Preparing the Fries

    Cutting the Potatoes

    Peel the potatoes and cut them into thick strips to make fries.

    Soaking the Potatoes

    Place the cut fries in cold water for at least 30 minutes to remove excess starch.

    Drying the Fries

    Drain the soaked fries and pat them dry with paper towels.

    Frying the Fries

    Heat 4 cups of oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

    In a bowl, combine the mayonnaise, chopped pickles, capers, lemon juice, and chopped dill. Mix well and set aside.
