Prepare the Shrimp

    Marinate the Shrimp

    In a bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add the shrimp and toss to coat. Let it marinate for at least 15 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers and grill for about 2-3 minutes on each side, or until they are opaque and cooked through.

Prepare the Vegetables

    Season the Vegetables

    In a bowl, toss the seasonal mixed vegetables with olive oil, salt, and black pepper.

    Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

    Preheat the oven to 425°F (220°C). Toss the sweet potato fries with olive oil, salt, and paprika in a bowl.

    Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through until they are crispy and golden brown.

Assemble the Dish

    On a plate, arrange the lettuce leaves as a bed. Place the grilled shrimp on top, followed by the grilled vegetables. Serve with sweet potato fries on the side.
