Preparing the Gyro Meat

    Marinate the Meat

    In a bowl, combine the olive oil, garlic powder, oregano, salt, and black pepper. Add the gyro meat and coat it well in the marinade. Let it marinate for at least 30 minutes.

    Grill the Meat

    Preheat your grill to medium-high heat. Once hot, add the marinated gyro meat and grill for about 5-7 minutes on each side, or until cooked through and nicely charred. Remove from the grill and let it rest for a few minutes before slicing it thinly.

Assembling the Gyro

    Prepare the Toppings

    While the meat is resting, prepare the toppings. Slice the onion, dice the tomato, and set aside the salad greens and crumbled feta cheese.

    Warm the Pita

    If desired, warm the pita bread on the grill for about 1-2 minutes on each side until soft and pliable.

    Assemble the Gyros

    Take a piece of warm pita bread and layer it with a generous amount of the sliced gyro meat. Top with sliced onions, diced tomatoes, salad greens, and crumbled feta cheese. Drizzle with tzatziki sauce to finish.
