Steak Preparation

Prepare the Breaded Steak
In a shallow dish, combine flour, salt, and black pepper. In another bowl, whisk together eggs and milk. Dip each cube steak into the flour mixture, then the egg mixture, and back into the flour to coat evenly.

Fry the Steak
In a large skillet, heat vegetable oil over medium-high heat. Fry each breaded steak for 3-4 minutes on each side or until golden brown. Remove and place on a paper towel-lined plate to drain excess oil.

Make the Gravy
Using the drippings left in the skillet after frying the steaks, sprinkle in the flour and stir to create a roux. Cook for 2 minutes, then gradually whisk in the beef broth. Bring to a simmer and cook until thickened. Season with salt and pepper.
Wedges & Vegetables

Prepare Wedges
Preheat oven to 425°F (220°C). Cut potatoes into wedges and toss with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes or until golden and crispy.

Cook Seasonal Vegetables
In a small pot, steam or sauté seasonal vegetables until tender, about 5-7 minutes. Season with salt and pepper to taste.
