Chicken Preparation

    Prepare the Chicken

    Rinse the chicken breasts under cold water and pat them dry with paper towels. Cut each breast into strips.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water, whisking until the batter is smooth and free of lumps.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Dip each chicken strip into the batter, allowing excess batter to drip off. Carefully place the battered chicken strips into the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the potatoes and cut them into even strips, about 1/4 inch thick.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Fries

    In another pot or deep fryer, heat the vegetable oil over medium-high heat. Fry the potatoes in batches until golden and crispy, about 4-6 minutes. Remove and drain on paper towels, then season with salt to taste.
