Cook the Pasta
In a large pot, bring water to a boil. Add salt and penne pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with olive oil, salt, and pepper. Place them on a baking sheet and bake for 20-25 minutes or until fully cooked (internal temperature should reach 165°F/75°C).

Coat with Buffalo Sauce
Once the chicken is cooked, remove it from the oven and let it cool slightly. Shred the chicken using two forks and then mix it with buffalo sauce until well coated.

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently until the mixture thickens, about 5-7 minutes.

Incorporate Cheese
Lower the heat and add the shredded cheddar cheese and cream cheese. Stir until melted and smooth. Season with garlic powder and onion powder.
Combine and Serve

In a large mixing bowl, combine the cooked penne pasta, cheese sauce, and buffalo chicken. Mix well until everything is coated in sauce.

Transfer the buffalo mac & cheese to a serving dish. Top with diced tomatoes, sliced green onions, and drizzle with extra buffalo sauce if desired. Serve hot.
