    Prepare the Broth

    In a saucepan, heat the vegetable broth over medium heat and keep it warm but not boiling.

    Sauté the Mushrooms

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté until they're golden brown and tender, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté Shallots and Garlic

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped shallots and sauté until translucent, about 3 minutes. Add the minced garlic and sauté for another minute.

    Toast the Rice

    Add the Arborio rice to the skillet with the shallots and garlic. Stir frequently for about 2-3 minutes until the rice is lightly toasted.

    Deglaze with Wine

    Pour in the dry white wine and stir until it is mostly absorbed by the rice.

    Add Broth Gradually

    Add the warm vegetable broth one ladle at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Incorporate Cheese and Mushrooms

    Once the risotto is cooked, stir in the diced Taleggio cheese, sautéed mushrooms, chopped rosemary, dried figs, salt, and black pepper. Mix until everything is well combined and creamy.

    Serve

    Plate the risotto hot, garnished with additional rosemary or cheese if desired.
