1. Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
2. Mix until the crumbs are evenly coated with butter and press the mixture firmly into the bottom of a 9-inch springform pan.
3. Bake the crust in a preheated oven at 350°F (175°C) for 10 minutes, then remove and let it cool.
4. Prepare the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy.
5. Gradually add the sour cream, vanilla extract, and granulated sugar, mixing until well combined.
6. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
7. Sift in the all-purpose flour and mix until just incorporated. Finally, fold in the lemon zest.
8. Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan.
9. Bake in the preheated oven at 325°F (160°C) for 60-70 minutes, or until the center is set but still slightly jiggly.
10. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
11. Chill and Serve
