Prepare the Chicken
Cut the chicken breast into small, bite-sized cubes. Season with salt and black pepper.

Grill the Chicken
Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Add the diced chicken and grill for about 6-8 minutes or until cooked through and golden brown. Remove from heat and set aside.

Sauté the Vegetables
In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic, diced carrots, and cook for about 3-4 minutes until softened. Stir in the frozen peas and corn, cooking for another 2 minutes.

Cook the Rice
Add the Arborio rice to the pot and stir for 1-2 minutes until the rice is well-coated with the oil and has a slightly translucent appearance.

Add the Broth
Gradually pour in the chicken broth, stirring constantly. Bring to a gentle simmer and cook for about 20 minutes, or until the rice is creamy and al dente.

Combine Ingredients
Once the rice is cooked, gently fold in the grilled chicken. Adjust seasoning with additional salt and pepper if needed.

Remove from heat and let it sit for a couple of minutes. Garnish with chopped parsley before serving.
