    Prepare the Steak

    Season the flat iron steak with salt and black pepper on both sides. Let it marinate for about 15-20 minutes at room temperature.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, place the steak on the grill/skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 10 minutes before slicing.

    Caramelize the Onions

    While the steak is resting, slice the onion thinly. In the same skillet, add the remaining tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

    Prepare the Pesto Mayo

    In a small bowl, mix together the pesto and mayonnaise until well combined.

    Assemble the Sandwich

    Slice the sandwich rolls in half. Spread a generous amount of the pesto mayo on the inside of each roll. Layer the arugula, sliced steak, caramelized onions, and slices of tomato on the bottom half. Top with the other half of the roll.

    Serve

    Cut the sandwich in half if desired, and serve immediately with your favorite side.
