Prepare the Watermelon
Cut the watermelon into thick slices, about 1 inch in thickness. Remove the rind and set aside.

Sear the Watermelon
Heat 1 tablespoon of olive oil in a grill pan or skillet over medium-high heat. Once hot, add the watermelon slices and sear for about 3-4 minutes on each side until grill marks appear and the watermelon is heated through.

Prepare the Vegan Feta
Crumble the vegan feta into small pieces and set aside.

Make the Honeydew Vinaigrette
In a blender, combine the honeydew melon (peeled and cubed), 1 tablespoon of olive oil, salt, and black pepper. Blend until smooth and creamy to create a vinaigrette.

Pickle the Serrano Pepper
Slice the serrano pepper thinly and soak in a mixture of vinegar and a pinch of salt for at least 10 minutes to pickle slightly.

Assemble the Salad
On a plate, layer the local greens, top with the seared watermelon steaks, sprinkle the crumbled vegan feta, drizzle with honeydew vinaigrette, and garnish with pickled serrano slices.

Serve the seared watermelon steaks with a side of romesco sauce for dipping or drizzling on top.
