    Prepare the Skirt Steak

    Season the outer skirt steak with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat 2 tablespoons of olive oil over high heat until shimmering.

    Sear the Skirt Steak

    Add the seasoned skirt steak to the hot skillet and sear for about 3-4 minutes per side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for about 5 minutes before slicing.

    Make the Salsa Verde

    While the steak is resting, prepare the salsa verde by combining garlic cloves, parsley, cilantro, red onion, lime juice, and a pinch of salt in a food processor. Blend until smooth.

    Prepare the Plantain Chips

    Peel the plantains and slice them into thin rounds. Heat vegetable oil in a separate pan over medium heat.

    Fry the Plantain Chips

    Once the oil is hot, add the plantain slices in batches and fry until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
