Preparation

  1. 1

    Prepare the Beef

Cut the beef chuck into large cubes (about 2-inch pieces). Season with salt and black pepper.

  2. 2

    Prep Vegetables

Peel and chop the carrots and turnips into uniform pieces for even cooking.

  3. 3

    Prepare the Gnocchi

If not using pre-packaged gnocchi, prepare homemade potato gnocchi according to your favorite recipe.

Cooking

  1. 4

    Sear the Beef

In a large Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef cubes and sear them on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

  2. 5

    Sauté the Vegetables

In the same pot, add the chopped carrots and turnips. Sauté for about 5 minutes until they start to soften.

  3. 6

    Combine Ingredients

Return the beef to the pot and add the Niçoise olives, orange zest, fresh rosemary, saffron, and syrah red wine. Bring to a simmer.

  4. 7

    Slow Cook

Cover and reduce heat to low. Let the mixture simmer for about 2-3 hours, or until the beef is tender and the flavors have melded.

  5. 8

    Cook the Gnocchi

In a separate pot, cook the gnocchi according to package instructions. Drain and set aside.

  6. 9

    Final Touches

Once the beef is tender, stir in the cooked gnocchi and let them warm through for about 5 minutes. Adjust seasoning if necessary.

  7. 10

    Serve

Serve the Provençale Beef Daube hot, garnished with freshly grated Parmesan cheese.
