Marinade

    Prepare the Marinade

    In a large bowl, combine the lemon juice, minced garlic, paprika, cayenne pepper, olive oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Sweet Potato

    Prepare the Sweet Potatoes

    Preheat the oven to 425°F (220°C). In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and black pepper until evenly coated.

    Bake the Sweet Potatoes

    Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, flipping halfway through.

Pickled Peppers

    Make the Pickled Peppers

    In a saucepan, combine the sliced jalapeño peppers, white vinegar, sugar, and salt. Bring to a boil over medium heat, then reduce the heat and simmer for 5 minutes. Remove from heat and let cool.

Cooking Chicken

    Cook the Chicken

    Heat a grill or grill pan over medium-high heat. Remove the chicken thighs from the marinade and cook for 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.

Serving

    On a serving plate, arrange the roasted sweet potatoes. Place the grilled chicken thighs on top and garnish with pickled peppers and chopped cilantro. Serve immediately.
