Preparing the Beef

Season the Beef
Trim any excess fat from the beef chuck roast and season with Italian seasoning, garlic powder, onion powder, salt, and black pepper. Ensure all sides are well coated.

Sear the Beef
In a large skillet, sear the seasoned beef over medium-high heat for about 4-5 minutes on each side until browned. Remove from the skillet and transfer to a slow cooker.
Making Au Jus

Cook the Beef
Pour the au jus mixture over the seared beef in the slow cooker. Cover and cook on low for 6-8 hours or until the beef is tender and shreds easily.
Making Giardiniera

Mix Giardiniera
In a bowl, combine the pickled vegetables, olive oil, and red wine vinegar. Stir well to coat the vegetables and set aside.
Assembling the Sandwich

Shred the Beef
Once the beef is cooked, remove it from the slow cooker and shred it using two forks. Dip the shredded beef back into the au jus to keep it moist.

Assemble the Sandwich
Slice the Italian rolls and pile the shredded beef onto the bottom half. Top with giardiniera and drizzle with some au jus.

Cover with the top half of the roll and serve with a small bowl of au jus on the side for dipping.
