Dough Preparation

Activate Yeast
In a small bowl, combine warm milk (110°F) and active dry yeast with 1 tablespoon of sugar. Allow it to sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, whisk together the flour, remaining sugar, and salt. Create a well in the center and add the yeast mixture, melted butter, and eggs. Mix until a dough forms.

Knead Dough
Turn dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place until doubled (about 1-2 hours).
Shaping and Frying

Shape Pączki
Once risen, punch down the dough and turn it out onto a floured surface. Roll out to about ½ inch thick. Cut out circles using a cookie cutter (about 3 inches in diameter).

Fill Pączki
Place a spoonful of fruit filling in the center of half the circles. Top with the remaining circles and pinch the edges to seal.

Fry Pączki
Heat oil in a deep fryer or heavy pot to 375°F. Fry pączki in batches, flipping once, until golden brown on both sides (about 3-4 minutes).

Drain
Remove pączki with a slotted spoon and place on paper towels to drain excess oil.
