Mafaldine Mushroom Bolognese

    Prepare the Pasta

    Bring a large pot of salted water to a boil. Add the mafaldine pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics

    In a large skillet over medium heat, heat the olive oil. Add the finely chopped shallots and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Mushrooms

    Add the chopped mixed mushrooms to the skillet. Sauté for about 8-10 minutes until the mushrooms are browned and have released their moisture.

    Add Tomato Paste and Tomatoes

    Stir in the tomato paste and cook for 2 minutes. Then, add the canned crushed tomatoes, sherry, and vegetable broth. Mix well to combine.

    Season the Sauce

    Add the dried oregano, salt, and black pepper. Stir to combine and let the sauce simmer for 15-20 minutes, stirring occasionally.

    Combine Pasta and Sauce

    Once the sauce has thickened, fold in the cooked mafaldine pasta and half of the chopped fresh parsley. Toss to coat the pasta evenly with the sauce.

    Serve the Mafaldine Mushroom Bolognese in bowls, garnished with the remaining parsley and a generous sprinkle of grated pecorino cheese on top.
