    Prepare the Dates

    In a bowl, combine the pitted Medjool dates and boiling water. Let them soak for about 15 minutes until they soften.

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

    Mix Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

    Cream Butter and Sugar

    In a large mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy, about 3-4 minutes.

    Add Eggs and Vanilla

    Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

    Combine Mixtures

    Drain the dates and chop them coarsely. Fold the soaked dates into the butter-sugar mixture, then gradually add the dry ingredients, mixing just until combined.

    Bake the Cake

    Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature with tamarind caramel, candied pecans, and brown sugar vanilla ice cream.
