Make the Sauce
Gradually whisk in the milk, ensuring no lumps form. Continue to cook, stirring constantly, until the sauce thickens and coats the back of a spoon.

Season the Sauce
Add salt, black pepper, and a pinch of nutmeg to the sauce. Remove from heat and stir in half of the Gruyere cheese until melted and smooth.

Assemble the Sandwich
On a baking sheet, lay out 4 slices of sourdough bread. Top each with a slice of ham, a generous portion of Mornay sauce, and then sprinkle with more Gruyere cheese. Place the other 4 slices of bread on top.

Prepare the Potatoes
Peel and cut the Russet potatoes into thin strips to resemble fries.

Fry the Potatoes
Heat oil in a deep fryer or large pot. Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries
While still hot, drizzle truffle oil over the fries and toss with salt, black pepper, and grated Parmesan cheese.

Garnish the fries with fresh parsley before serving.
