    Soaking the Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight or for at least 8 hours.

    Preparing the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the soaked chickpeas, garlic cloves, chopped onion, fresh parsley, ground cumin, ground coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

    Chilling the Mixture

    Transfer the falafel mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 30 minutes to help it firm up.

    Forming the Falafel Balls

    Once chilled, scoop out portions of the mixture and roll them into balls or patties, about 1.5 inches in diameter.

    Frying the Falafel

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the falafel balls in batches, frying for about 3-4 minutes on each side until golden brown and crispy. Use a slotted spoon to remove them and let them drain on paper towels.
