Preparing the Fish

    Season the Dorade

    In a bowl, season the dorade filets with olive oil, salt, and black pepper on both sides. Let them marinate for about 15 minutes.

    Heat a non-stick skillet over medium-high heat. Place the dorade filets skin-side down and cook for 4-5 minutes until the skin is crispy. Flip the filets and cook for another 3-4 minutes until the fish is cooked through.

Making Romesco Sauce

    Blend the Ingredients

    In a blender, combine the roasted red peppers, toasted almonds, minced garlic, red wine vinegar, olive oil, paprika, and salt. Blend until smooth and creamy.

    Adjust Seasoning

    Taste the romesco sauce and adjust seasoning if necessary. Set aside.

Charred Cipollini Onions

    Prepare the Onions

    Peel the cipollini onions and toss them in olive oil, salt, and black pepper.

    Heat a grill pan over medium-high heat. Add the cipollini onions and char them for about 5-7 minutes, turning occasionally, until they are caramelized and tender.

Plating the Dish
