Chocolate Hazelnut Bars

Feuilletine Praline

Orange Grand Marnier Sauce

Method

Chocolate Hazelnut Bars

  1. 1

    Prepare the Hazelnuts

Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and toast for about 10-12 minutes until golden brown. Let them cool, then chop coarsely.

  2. 2

    Melt the Chocolate and Butter

In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

  3. 3

    Mix Sugars and Eggs

In a large mixing bowl, combine granulated sugar and brown sugar. Add the eggs and whisk until the mixture is light and fluffy. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate and butter mixture to the egg and sugar mixture, stirring continuously until well combined.

  5. 5

    Add Dry Ingredients

Sift together the all-purpose flour and salt. Fold the dry mixture into the wet mixture until just combined, then gently fold in the chopped hazelnuts.

  6. 6

    Bake

Pour the batter into a greased 9x13 inch baking pan. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before cutting into bars.

Feuilletine Praline

  1. 7

    Prepare Feuilletine Praline

In a mixing bowl, combine the feuilletine and hazelnut praline paste. Mix until the feuilletine is evenly coated with the praline.

  2. 8

    Assemble

Once the chocolate hazelnut bars have cooled, spread a thin layer of the feuilletine praline mixture evenly over the top of the bars.

Orange Grand Marnier Sauce

  1. 9

    Make the Sauce

In a small saucepan over medium heat, combine orange juice, orange zest, Grand Marnier, and sugar. Bring to a simmer and cook for about 5-7 minutes until the sauce thickens slightly. Remove from heat.

  2. 10

    Serve

Drizzle the Orange Grand Marnier Sauce over the chocolate hazelnut bars before serving.
