    Prepare the Vegetables

    Peel and thinly slice the celeriac and potatoes using a mandoline or sharp knife. Aim for uniform thickness for even cooking.

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.

    Mix Vegetables

    In a large bowl, combine the sliced celeriac and potatoes. Add sautéed garlic, fresh thyme, salt, and black pepper, tossing to coat evenly.

    In a greased baking dish, start layering the vegetable mix. Add a layer of the celeriac and potato mixture, followed by a sprinkle of grated cheese. Repeat until all the mixture is used.
