Cannoli Shells

Make the Dough
In a large bowl, mix the flour, sugar, salt, cocoa powder, and cinnamon together.

Combine Wet Ingredients
In a separate bowl, whisk the egg, white wine (or vinegar), and melted butter together.

Form the Dough
Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. Knead for about 5 minutes until smooth.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll and Shape
Roll out the dough thinly and cut into circles. Wrap each circle around a cannoli form, sealing the edges with a little water.

Fry the Shells
Heat oil in a deep pan. Fry the shells until golden brown, about 2-3 minutes. Remove and let cool on paper towels.
Ricotta Filling

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.

Whip the Cream
In a separate bowl, whip the heavy cream until stiff peaks form.

Combine Filling Ingredients
Gently fold the whipped cream into the ricotta mixture. Add chocolate chips and candied citrus peel, mixing until evenly distributed.

Thicken the Caramel
Reduce heat and simmer until the mixture thickens and coats the back of a spoon, about 10-15 minutes. Stir in butter until melted.
Assembly

Fill the Cannoli
Using a piping bag, fill the cooled cannoli shells with the ricotta filling.

Garnish and Serve
Drizzle red wine caramel over the filled cannoli and top with mixed berries. Serve immediately.
