Calabrese Shrimp

Method

Calabrese Shrimp

  1. 1

    Prepare the shrimp

In a large bowl, toss the jumbo shrimp with olive oil, salt, and black pepper. Ensure the shrimp are evenly coated. Set aside to marinate for about 15 minutes.

  2. 2

    Make the Calabrese butter sauce

In a medium saucepan over medium heat, melt the stick of unsalted butter. Add the minced garlic and chopped Calabrese sausage. Sauté for about 3-4 minutes until the garlic is fragrant and the sausage is slightly browned.

  3. 3

    Add lemon juice and parsley

Stir in the fresh lemon juice and chopped parsley into the butter sauce. Allow it to simmer for another minute, and then remove from heat.

  4. 4

    Grill the shrimp

Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes prior). Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.

  5. 5

    Toast the baguette

While the shrimp are grilling, slice the baguette into 1-inch thick slices. Brush each slice lightly with olive oil and place on the grill for about 2 minutes on each side or until golden and crispy.

  6. 6

    Serve

Once the shrimp are cooked and the baguette is toasted, remove them from the grill. Serve the shrimp drizzled with the Calabrese butter sauce alongside the toasted baguette slices for dipping.
