Lemon Curd

    Make the Lemon Curd

    In a medium saucepan, combine the lemon juice and sugar. Whisk in the eggs until fully mixed. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 10-12 minutes.

    Add Butter and Salt

    Remove the saucepan from heat and stir in the butter and a pinch of salt until the butter is melted and the mixture is smooth. Transfer to a bowl, cover with plastic wrap directly on the surface, and refrigerate until chilled.

Berries

    Prepare the Berries

    Rinse the mixed berries under cold water and pat them dry with a paper towel. Set aside for assembly.

Whipped Cream

    Make the Whipped Cream

    In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form, about 3-5 minutes.

Raspberry Coulis

    Prepare the Raspberry Coulis

    In a small saucepan over medium heat, combine the raspberries, granulated sugar, and lemon juice. Cook while stirring gently until the raspberries break down and the mixture thickens, about 5-7 minutes. Strain through a fine-mesh sieve to remove seeds.

Amaretti Crumble

    Make the Amaretti Crumble

    In a food processor, pulse the amaretti cookies until they are finely crushed. In a small bowl, mix the crushed cookies with melted butter until crumbly. Spread on a baking sheet and bake at 350°F (175°C) for 8-10 minutes until golden.
