    Prepare the Broccolini

    Preheat your grill or grill pan over medium heat. Drizzle the broccolini with 1 tablespoon of olive oil and season with salt and black pepper. Grill for about 4-5 minutes until tender and slightly charred. Remove from heat and set aside.

    Caramelize the Onions

    In a skillet over medium-low heat, add 1 tablespoon of olive oil. Slice the onion thinly and add it to the skillet. Cook slowly, stirring occasionally, for about 15-20 minutes until the onions are soft, golden brown, and caramelized. Remove from heat.

    Roast the Cherry Tomatoes

    While the onions are caramelizing, preheat the oven to 200°C (400°F). Place the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 15-20 minutes until they are blistered and juicy. Remove from oven.

    Prepare the Pizza

    Roll out the pizza dough on a floured surface to your desired thickness. Place the rolled dough on a pizza stone or baking sheet.

    Assemble the Pizza

    Spread an even layer of caramelized onions over the pizza dough. Top with grilled broccolini, roasted cherry tomatoes, and chunks of mozzarella cheese. Finally, grate parmesan cheese over the top.

    Bake the Pizza

    Preheat your oven to 220°C (425°F). Bake the pizza for about 12-15 minutes or until the crust is golden brown and the cheese is melted and bubbly.

    Once baked, remove the pizza from the oven. Let it cool for a couple of minutes, slice, and serve hot.
