    Preparation of Branzino

    Preheat your oven to 425°F (220°C). Rinse the branzino fish under cold water and pat it dry with paper towels. Make three diagonal cuts on each side of the fish to allow flavors to penetrate.

    Seasoning the Fish

    Drizzle 1 tablespoon of olive oil over the fish, ensuring it covers the entire surface. Sprinkle sea salt and black pepper evenly on both sides and inside the cavity of the fish.

    Stuffing the Fish

    Stuff the cavity of the branzino with sliced garlic, fresh thyme, and lemon wedges (cut the lemon into slices).

    Preparing the Baking Tray

    On a baking tray, place the halved cherry tomatoes and capers. Drizzle with the remaining tablespoon of olive oil, and toss to coat.

    Baking the Branzino

    Lay the branzino on top of the cherry tomatoes and capers. Bake in the preheated oven for about 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.
