Preparing the Salad

Prepare Cracked Wheat
Rinse the cracked wheat (bulgur) under cold water. Place it in a bowl and pour in enough boiling water to cover it. Let it soak for about 15-20 minutes, or until it is tender. Drain any excess water and set aside.

While the cracked wheat is soaking, finely chop the fresh parsley, tomatoes, and onion. Make sure the parsley is minced as fine as possible for the best texture.

In a large mixing bowl, combine the soaked cracked wheat, chopped parsley, tomatoes, and onion. Toss gently to combine all the ingredients.
