Method

Preparing the Salad

  1. 1

    Prepare Cracked Wheat

Rinse the cracked wheat (bulgur) under cold water. Place it in a bowl and pour in enough boiling water to cover it. Let it soak for about 15-20 minutes, or until it is tender. Drain any excess water and set aside.

  2. 2

    Chop Vegetables

While the cracked wheat is soaking, finely chop the fresh parsley, tomatoes, and onion. Make sure the parsley is minced as fine as possible for the best texture.

  3. 3

    Combine Ingredients

In a large mixing bowl, combine the soaked cracked wheat, chopped parsley, tomatoes, and onion. Toss gently to combine all the ingredients.

Making the Dressing

  1. 4

    Mix Dressing

In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper until well combined.

  2. 5

    Dress the Salad

Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly. Adjust seasoning if necessary.

Final Touches

  1. 6

    Chill and Serve

Let the tabbouleh salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled as a refreshing side dish.
