Preparation of Filling

    Cook the Rice

    In a medium saucepan, combine 1 cup of long-grain rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and water is absorbed.

    Sauté Onion

    In a skillet, heat 3 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for 5-7 minutes, or until the onion is soft and translucent.

    Combine Filling Ingredients

    In a large mixing bowl, combine the cooked rice, sautéed onion, chopped parsley, dill, mint, salt, black pepper, and lemon juice. Mix well until all ingredients are evenly incorporated.

Stuffing Grape Leaves

    Prepare Grape Leaves

    Lay a grape leaf on a clean surface, vein side up. Place about 1 tablespoon of the filling at the base of the leaf.

    Roll the Grape Leaf

    Fold the sides of the leaf over the filling, then roll it up from the base to the tip, creating a tight roll. Repeat with the remaining leaves and filling.

Cooking

    Arrange Stuffed Leaves

    In a large pot, layer some of the leftover grape leaves on the bottom to prevent sticking. Arrange the stuffed grape leaves seam side down in the pot, packing them tightly together.

    Prepare Cooking Liquid

    In a separate bowl, mix 2 cups of water, 2 tablespoons of olive oil, and 2 tablespoons of lemon juice. Pour this mixture over the stuffed grape leaves in the pot.

    Cook the Grape Leaves

    Cover the pot and bring it to a gentle simmer over medium heat. Cook for about 40-45 minutes, or until the grape leaves are tender.
