Preparing the Qtayef Batter

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, semolina, yeast, baking powder, sugar, and salt. Mix well to ensure even distribution.

Add Water
Gradually add the warm water to the dry mixture while stirring continuously to avoid lumps. Mix until you achieve a smooth batter consistency.

Rest the Batter
Cover the bowl with a clean kitchen towel and let the batter rest for about 30 minutes in a warm place until it becomes slightly bubbly.
Preparing the Filling

Mix Filling Ingredients
In a mixing bowl, combine the ricotta cheese, chopped walnuts, sugar, cinnamon powder, and rose water. Stir until all ingredients are well incorporated.

Set Aside
Cover the filling mixture and set it aside while you prepare the Qtayef.
Cooking the Qtayef

Heat the Pan
Preheat a non-stick skillet or griddle over medium heat.

Cook Qtayef
Pour a small ladle of the batter onto the skillet, forming a round pancake about 4-5 inches in diameter. Cook until bubbles form on the surface and the edges look dry (about 2-3 minutes). Do not flip.

Fill the Qtayef
Once cooked, remove the Qtayef from the skillet and place it on a clean surface. While still warm, place a spoonful of the filling in the center of the Qtayef. Fold the pancake in half and pinch the edges to seal.

Simmer the Syrup
Reduce the heat and let the syrup simmer for about 10 minutes until it thickens slightly. Remove from heat and let it cool.

Drizzle Syrup
Once the Qtayef are filled and shaped, drizzle the cooled syrup over them before serving. Optionally, you can garnish with additional chopped walnuts or a sprinkle of cinnamon.
