Prepare the Mint
Rinse the fresh mint leaves under cold water to remove any dirt or debris. Pat them dry with a clean kitchen towel.

Juice the Lemons
Cut the lemons in half and use a juicer to extract the juice. You should have about 3/4 cup of lemon juice. Remove any seeds from the juice.

Make the Mint Syrup
In a small saucepan, combine 1 cup of water and the granulated sugar. Heat over medium heat until the sugar has completely dissolved. Add the mint leaves and bring to a gentle simmer. Remove from heat and let steep for 15 minutes. Strain the syrup into a bowl, discarding the mint leaves.
