Method

Fattoush Salad

    Prepare the Vegetables

    In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomatoes, sliced radishes, chopped green onions, chopped parsley, and chopped mint.

    Make the Dressing

    In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and black pepper until well combined.

    Combine and Serve

    Pour the dressing over the salad and toss to combine. Add the toasted pita pieces and serve immediately.

Hummus

    Blend the Ingredients

    In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water.

    Process Until Smooth

    Blend until smooth and creamy. If necessary, add more water, 1 tablespoon at a time, to achieve desired consistency.

    Serve

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika for garnish.

Falafel

    Prepare the Chickpeas

    Drain the soaked chickpeas and place them in a food processor.

    Blend with Seasonings

    Add chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking powder to the processor. Blend until a coarse mixture forms.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add flour. Mix well and then shape into small balls or patties.

    Fry the Falafel

    Heat oil in a deep pan over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve warm.

Pita Bread

    Mix the Dough

    In a bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil, mixing until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover with a cloth, and let it rise for about 1 hour or until doubled in size.

    Shape the Pitas

    Preheat the oven to 475°F (245°C). Divide the dough into small balls and roll each into a flat circle.

    Bake the Pitas

    Place the rolled dough onto a baking sheet and bake for 5-7 minutes until puffed and cooked through. Remove and let cool slightly.
