Falafel

Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Blend until the mixture is well combined but still slightly chunky.

Shape the Falafel
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Fry the Falafel
Heat oil in a deep frying pan over medium heat. Carefully add the falafel balls in batches, frying for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Blend the Ingredients
In a food processor, combine the canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth and creamy.

Adjust Seasoning
Taste and adjust the seasoning if needed, adding more salt or lemon juice to your liking.

Roast the Eggplant
Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and roast it for about 30-40 minutes until soft. Allow to cool, then scoop out the flesh.

Prepare the Vegetables
Chop the lettuce, cucumber, tomato, and radishes. Slice the green onions.

Toast the Pita
Tear the pita bread into pieces and toast it in the oven until crispy.

Assemble the Salad
In a large bowl, combine all the vegetables, toasted pita, sumac, olive oil, lemon juice, and salt. Toss well to combine.

Stuff the Grape Leaves
Lay out a grape leaf, place a spoonful of filling at the base, fold in the sides, and roll tightly. Repeat until all filling is used.

Cook the Dolmadakia
Place the stuffed grape leaves in a pot, cover with water, and simmer for about 30-40 minutes until cooked through.
Rice

Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear.

In a pot, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
