Preparation

    Prepare the Ingredients

    Chop the red bell pepper, carrots, and potatoes into bite-sized pieces. Mince the garlic and dice the onion.

    Season the Lamb

    Rub the lamb shank with salt, black pepper, and paprika. Set aside.

Cooking

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the lamb shank and sear on all sides until browned, about 5-7 minutes. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Then add the red bell pepper, carrots, and potatoes. Cook for another 5 minutes.

    Add Liquids and Simmer

    Stir in the tomato paste and cook for 1 minute. Then add the beef or lamb broth and the bay leaf. Return the lamb shank to the pot. Bring to a boil, then reduce heat to low, cover, and let simmer for about 1.5 hours, or until the lamb is tender.

    Cook the Rice

    While the lamb is cooking, prepare the rice according to package instructions.

    Serve

    Once the lamb is tender, remove it from the pot and serve over a bed of rice with the vegetable broth and vegetables ladled over the top.
