Lamb Marinade

Marinate the Lamb
In a large bowl, combine the lamb cubes, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, and chopped parsley. Mix well until the lamb is evenly coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Make the Salad
In a bowl, combine diced cucumber, diced tomato, thinly sliced red onion, and chopped mint leaves. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.
Skewering and Grilling

Prepare the Kabobs
Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.

Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
