Prepare Filling

    Mix the Filling

    In a mixing bowl, combine the ricotta cheese, granulated sugar, and rose water. Mix until smooth and well combined. Fold in the finely chopped pistachios and set aside.

Prepare Base

    Prepare Knafeh Dough

    Preheat your oven to 180°C (350°F). In a large bowl, take the shredded phyllo pastry and pour melted butter over it. Toss well until the dough is fully coated with butter.

    Layer the Base

    Grease a round baking dish (about 30 cm in diameter) with some melted butter. Spread half of the buttered knafeh dough evenly in the bottom of the dish, pressing down firmly.

    Add Filling

    Spread the prepared filling evenly over the knafeh dough layer. Ensure that it is evenly distributed.

    Top with Dough

    Cover the filling with the remaining half of the buttered knafeh dough. Press gently to compact it.

Bake and Prepare Syrup

    Bake Knafeh

    Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown.

    Prepare the Syrup

    While the knafeh is baking, prepare the syrup. In a saucepan, combine granulated sugar, water, and lemon juice. Bring to a boil, then reduce heat and let simmer for about 10 minutes until slightly thickened. Remove from heat and stir in rose water. Allow to cool.

    Finish and Serve

    Once the knafeh is baked, remove it from the oven and immediately pour the cooled syrup over it, distributing evenly. Allow it to soak for about 10 minutes before serving. Cut into squares and garnish with additional pistachios if desired.
