Marinated Chicken

Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, ground cumin, paprika, turmeric, cinnamon, black pepper, salt, lemon juice, and yogurt. Mix well.

Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Make the Garlic Sauce
In a small bowl, combine minced garlic, mayonnaise, lemon juice, and salt. Mix well until smooth. Adjust seasoning to taste, if necessary.

Cook the Rice
In a medium saucepan, combine basmati rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

While the chicken and rice are cooking, chop the parsley and prepare the cucumbers and tomatoes. Set aside for serving.
