Peel and Cut Potatoes
Peel the Russet potatoes and cut them into evenly sized strips, approximately 1/4 inch thick.

Soak Potatoes
Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch. This will help achieve crispy fries.

Dry Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove moisture.

Heat Oil
In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Fry Potatoes
Carefully add the dried potato strips to the hot oil in batches. Do not overcrowd the pot. Fry for about 4-6 minutes, or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle immediately with salt and your preferred seasonings (black pepper, garlic powder, and paprika) while they are still hot.
