Method

Preparation of Fava Beans

  1. 1

    Soak the fava beans

Place the fava beans in a large bowl and cover them with water. Allow them to soak overnight or for at least 8 hours.

  2. 2

    Cook the fava beans

Drain and rinse the soaked fava beans. In a large pot, add the fava beans and cover them with fresh water. Bring to a boil, reduce the heat, and simmer for about 1 to 1.5 hours, or until the beans are tender.

  3. 3

    Prepare garlic and seasoning

While the beans are cooking, peel and mince the garlic cloves.

Making Foul Mudammas

  1. 4

    Combine ingredients

Once the fava beans are tender, stir in the minced garlic, lemon juice, olive oil, salt, and black pepper. Mix well to combine all the flavors.

  2. 5

    Adjust seasoning

Taste the mixture and adjust the seasoning with more salt, pepper, or lemon juice as needed.

Serving

  1. 6

    Garnish and serve

Chop the fresh parsley and sprinkle it over the foul mudammas. Serve hot with warm pita bread on the side.
