Falafel

Soak Chickpeas
Soak the dried chickpeas in water overnight or for at least 8 hours.

Shape Falafel
Form the mixture into small balls or patties, about the size of a golf ball.

Fry Falafel
Heat oil in a deep pan over medium heat. Fry falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
Hummus

Blend Hummus Ingredients
In a food processor, combine canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth.

Adjust Consistency
If the hummus is too thick, add more water a tablespoon at a time until the desired consistency is reached.
Salad

Dress Salad
Drizzle with olive oil, lemon juice, and toss. Season with salt to taste.
Rice

Cook Rice
In a pot, combine basmati rice, water, and salt. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes until rice is tender and water is absorbed.
Tahina Sauce

Mix Tahina Sauce
In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth. Adjust seasoning to taste.
Pita

Warm pita bread in an oven or on a skillet for a few minutes until soft and pliable.
