    Soak the Chickpeas

    Rinse the dried chickpeas and soak them in a bowl of water overnight. Ensure they are fully submerged as they will expand.

    Make the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, add the chickpeas, parsley, onion, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse but well combined. Avoid over-processing.

    Add Flour

    Transfer the mixture to a bowl and stir in the flour until the mixture holds together but is not too dry. Adjust the flour as needed.

    Chill the Mixture

    Cover the bowl with plastic wrap or a lid and refrigerate the mixture for at least 30 minutes to help it firm up.

Cooking

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the falafel mixture into the oil; it should sizzle immediately.

    Form and Fry the Patties

    Using wet hands, form the chickpea mixture into small balls or patties (about 1-1.5 inches in diameter). Carefully drop them into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on all sides, about 3-4 minutes per side.

    Drain and Serve

    Once cooked, remove the falafel from the oil and place them onto a plate lined with paper towels to absorb excess oil. Serve warm with your favorite dipping sauce or in pita bread with fresh vegetables.
