Meat Mixture Preparation

    Mix Ingredients

    In a large bowl, combine the ground beef, ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, olive oil, chopped parsley, and lemon juice. Mix well until all ingredients are thoroughly combined.

    Marinate

    Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 1 hour, or overnight for best results.

Cooking the Meat

    Cook Mixture

    Preheat a grill or skillet over medium-high heat. Form the marinated meat mixture into patties or skewers and cook for about 5-7 minutes on each side, or until cooked through and browned.

Hummus Preparation

    Blend Ingredients

    In a food processor, combine the chickpeas, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth, adding water as needed to achieve desired consistency.

    Serve

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle paprika on top for garnish.

Tabbouleh Preparation

    Prepare Bulgur

    Place the bulgur wheat in a bowl and pour the boiling water over it. Cover and let sit for about 20 minutes, or until the water is absorbed.

    Mix Ingredients

    Fluff the bulgur with a fork and add the chopped parsley, mint, diced tomato, diced cucumber, lemon juice, olive oil, and salt. Mix well.

Rice Preparation

    Cook Rice

    In a pot, combine the rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and water is absorbed.

Assembly

    Serve

    On a serving platter, arrange the cooked meat mixture, hummus, tabbouleh, and rice. Serve with warm pita bread on the side.
