Meat Marinade

Pita or Tortilla Wrap

Method

Meat Preparation

  1. 1

    Marinate the Beef

In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, lemon juice, and plain yogurt. Mix well to form a marinade.

  2. 2

    Add Beef to Marinade

Cut the beef into thin strips and add it to the marinade. Ensure all the beef is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking the Beef

  1. 3

    Grill or Broil the Beef

Preheat the grill or broiler. Remove the beef from the marinade and thread it onto skewers. Grill or broil for about 8-10 minutes, turning occasionally, until the beef is well-cooked and has a nice char.

  2. 4

    Rest the Beef

Once cooked, remove the skewers from the grill and let the beef rest for about 5 minutes before slicing it into bite-sized pieces.

Assemble the Wrap

  1. 5

    Prepare the Wrap

Lay out the pita bread or tortillas. Place a generous amount of the sliced beef in the center of each wrap.

  2. 6

    Add Toppings

Top the beef with chopped parsley, diced tomatoes, diced cucumber, and sliced red onion.

  3. 7

    Drizzle Sauce

Add tahini sauce or garlic sauce on top of the toppings.

  4. 8

    Wrap and Serve

Fold the sides of the pita or tortilla over the filling and wrap it tightly. Serve immediately with extra sauce on the side.
